previous emails to be helpful and inspiring.  As you found out, vegetables are not only packed with essential vitamins, minerals, and fiber as well as provide important antioxidants that help protect our bodies against oxidative stress and inflammation but can also lead to numerous health benefits.

There are many other ways to incorporate vegetables into your diet, including trying new vegetables and preparation methods, swapping out unhealthy snacks for raw vegetables with dips, and making vegetables the star of the show in your meals.

Easy Vegetable Stir-Fry
Ingredients:
1 tablespoon oil ( if you want oil-free use water or broth) 2 cups mixed vegetables (such as bell peppers,
broccoli, carrots, and snap peas. Â The choice is yours! Â (You can even use frozen stir-fry vegetables) 1 clove garlic, minced Salt and pepper, to taste
Instructions:
Heat the oil (water or broth) in
a large skillet over medium-high heat. Add the mixed vegetables and garlic, and stir-fry for 5-7 minutes, or until the vegetables are tender but still slightly crisp. Season with salt and pepper to taste. Serve over rice or quinoa for a complete meal.
