There’s something magical and special about springtime!
It invites us to refresh the familiar, add a splash of surprise, and fully enjoy the beauty in delightful ways.
This week’s Whimsy is a sweet little nod to that
spirit. Let's give lemon tarts a whimsical twist with a creamy, fragrant swirl of basil-infused coconut cream.
It is one of those unexpected flavorings that is very tasty. It is bright yellow lemons, with an herbal twist, nestled in a golden crust and topped with tiny edible flowers, zest or herb
sprinklings. It is like sunshine in a bite-sized tart. 🍋🌿
🍋 Mini Lemon Tarts with Basil Cream
Plant-based | Naturally sweetened |
Gluten-free
Makes 6–8 mini tarts, depending on your tart pan size.
Tart Shells
Ingredients:
1 cup almond flour
2 tbsp coconut flour
2 tbsp maple syrup
3 tbsp coconut oil, melted
Pinch of salt
Instructions:
Preheat oven to 350°F (175°C).
In a mixing bowl, combine the tart shell ingredients.
Press soft dough into mini tart pans (or muffin tin lined with
parchment strips for easy removal).
Prick the bottoms with a fork and bake for 10–12 minutes, or until edges are lightly golden.
Let cool completely before adding filling.
Lemon Pie
Filling
Ingredients:
1/3 cup fresh lemon juice
Zest of 1 lemon
1/4 cup maple syrup
1/4 cup coconut milk (full-fat for creaminess)
1 tbsp cornstarch or arrowroot
1/8 tsp turmeric (optional, for color)
Instructions:
Whisk all ingredients in a small saucepan over medium
heat.
Stir constantly until the mixture thickens to a curd-like consistency.
Remove from heat.
Cool slightly
Spoon into tart shells.
Chill in the fridge for at least 1 hour to set.
Basil Cream Topping
Ingredients:
1/2 cup chilled coconut cream (scoop from the top of a
can)
1–2 tsp maple syrup
1/2 tsp vanilla extract
1 tsp finely chopped fresh basil
Instructions:
In a chilled bowl, whip the coconut
cream until light and fluffy.
Add maple syrup, vanilla and chopped basil.
Spoon or pipe onto chilled lemon tarts.
Optional Garnishes:
Edible flowers 🌸
Extra lemon zest 🍋
Tiny basil or mint sprigs 🌿
Add your springtime twist!
Try mint or lavender instead of basil.
How about orange in place
of lemon?
Decorate with candied citrus peel or a sprinkle of crushed dried petals.
These mini lemon tarts with basil cream are a joyful little celebration of spring’s playful energy.
